Chocolate Waffler Pillows
INGREDIENTS and PROPORTIONS:for Waffles:
2 cups all-purpose flour
1 tbsp. baking powder
1 cup unsweetened cocoa powder
1 cup salted butter, softened
2 cups white sugar
5 large eggs
2 tsp. pure vanilla extract
for Toppings:
1/3 cup confectioners' sugar
1/3 cup unsweetend cocoa powder
1 cup fresh saspberries
1 pint whipping cream, whipped
1/2 cup chocolate syrup
PROCEDURE:1) Grease and preheat waffle iron
2) in medium bowl combine flour, bakingg powder and cocoa. mix well wuth a whire whisk. Set aside
3) in large bowl whith an electic mixer cream butter and suger. Add eggs and vanilla and beat at medium speed. Butter will appear slightly curdled.
4) scrape down the sides of the bowl, then add the flour mixture and blend on low speed until just combined. Do not OVERMIX
5)Drop by rounded tablespoons onto hot waffle iron, using about one tablespoon per 4-by-4-inch square
6) cook approximately 1 minute
7) carefully transfer to cool surface
8) use any following topings singly or in combination: a dusting of confrctioners' sugar and cocoa powder; fresh rasberries and whipped cream; a drizzle of chocolate syrup
